Substitute Meat Replacement (walnut mushroom based
These yummy tacos are made with an in-house walnut-based meat replacement. 100% plant-based. This recipe can be used wherever a ground beef style replacement is needed
Ingredients:
8 Large Mushrooms 2 Tbsp Olive Oil
1 Cup Walnuts 1 Tbsp Kitchen Bouquet (or Gravy Master) mix
1 Tbsp vegan Beef Base 1 Medium Onion
2 Tbsp Cumin 4 Large Garlic cloves
2 Tbsp Chili powder 1 Can Diced Tomatoes
Cooking Instructions:
Soak walnuts in water overnight. Chop mushrooms, walnuts, onion, and garlic in a food processor until in small crumbles. Sautee crumbles in olive oil until lightly browned. Add in vegan base powder, cumin, chili powder, and diced tomatoes.

Ingredients:
5 large Potatoes Olive Oil (spray or liquid)
2 Cups Vegan Heavy Cream (we use Violife) 1 Cup NOURISH(theplanet) Parmesan Shreds
4 Garlic Cloves Salt
1 Yellow Onion Pepper
Cooking Instructions:
Preheat oven to 450F. Slice potatoes into thin slices. Parboil potatoes until partially cooked (reduces baking time). Slice onion into thin pieces. Mince garlic cloves. Coat baking dish with small amount of olive oil. Create layers of potatoes, onion, minced garlic, parmesan shreds, salt & pepper (to your taste) in baking dish. Pour over heavy cream, and top with more parmesan shreds. Bake in oven at 450F until potatoes are soft and top is browned. Approx 45 to 60 minutes depending on oven.
Potatoes au Gratin
This is a yummy cheesy casserole that will please the masses. 100% plant-based and gluten-free.

Ingredients:
1 pkg Tinkyada GF Brown Rice Elbow Pasta
4 medium size White Potatoes
1 Carrot
1/4 cup Apple Cider Vinegar
1 stick of Vegan Butter
1 cup NOURISH(theplanet) NooCheeze
1 cup NOURISH(theplanet) Cheddar Shreds
1 cup bread crumbs
Cooking Instructions:
Pre-heat oven to 350F. Peel carrot and potatoes and boil in salted water until soft. Add the carrot, potatoes, apple cider vinegar, butter, noocheeze, cheddar shreds and a small amount of the water used to boil veggies to a blender. Adjust the amountof liquid to the desired consistency. Boil one package of the Tinkyada GF elbow pasta for approx 12 to 14 minutes. Drain pasta and place in casserole dish. Blend the mixture and past together in a casserole dish. Top with GF breadcrumbs and place in oven. Bake at 350F until start bubbling.
